We usually sleep in on Sundays and then I make a brunch.  Rarely do we do the big “Sunday dinner” thing.  This started out to be a brunch pizza but I decided to just throw the ingredients together to make a casserole.  It was much quicker and easier to do than rolling out the biscuit dough for pizza and a good way to use all of the extra eggs our girls deposit in their nesting boxes all through the day.

Ingredients:

1 1/2 c. potatoes, cooked, peeled, medium dice

1 1/2 c. tomato, large dice

1 1/2 c. onions, small dice

1 c. bell peppers, small dice

1 c. cooked breakfast sausage

5 eggs, beaten

2 c. cheddar cheese, grated

2 c. bread cubes

1/8 c. fresh chives, minced

3 T fresh parsley, minced

1 c. milk

1/2 tsp. salt

1/4 tsp. pepper

Method:

Heat the oven to 350 degrees.

Add vegetables, sausage, herbs, and bread cubes to  a 13X9X2″ baking dish or pan.

Beat together eggs, milk, salt, and pepper.

Pour over ingredients in pan.

Cover with cheese.

Bake, covered, for 25 minutes.  Uncover and cook for another 25 minutes or until center is set and firm.
