Grilled Corn on the Cob with Chive Butter

This is such a no brainer that I’d  almost decided against posting it.  Perfect for 4th of July weekend though, so I figured I’d just go ahead with it.  I can’t wait for round two.

Ingredients:

8 shucked ears of corn

1/2 c. butter, softened

1/4 tsp. salt

1/8 tsp. freshly ground black pepper

2 T chives

Method:

Whip together chives, butter, salt, and pepper.  Chill, covered, overnight.

Soak corn ears in water for 30 minutes.  Grill over low to medium hot coals for 12 minutes.

Rub with Chive Butter while hot and serve.

Makes 4 to 8 servings.
